Ingredients
BASIC INGREDIENTS
- 10kg potatoes
- 200cl milk
- 10 tbsp cream
- 500g butter
- 1kg grated Gruyere cheese

- 10 onions
- 10 shallots
- 20 сloves of garlic
- 10 carrots
- 300g butter
DRESSING
- Salt
- Nutmeg
METHOD
- Сhop onions, garlic and shallots. Peel and cut the carrots in very fine brunoise. Peel the potatoes and cut into small pieces. Cook the potatoes in salted water for about 30 minutes.
- Fry the carrots in butter, then add onion, garlic and shallots. Add meat. Salt and pepper.
- Once the potatoes are cooked, pass them to the potato masher, add the butter, milk, cream and salt.
- Arrange the meat in several gratin dishes and cover with mashed potatoes. Sprinkle with grated cheese.
- Bake 10 minutes and 2 minutes under the grill.
